Texas White Queso

Ingredients
- 1 lb white American cheese (deli sliced)
- 12 oz evaporated milk
- 1 tbsp cornstarch
- 1 can Ro-Tel
- 1 jalapeño
- 2 tbsp butter
- 1-2 tbsp pickled jalapeño brine
Instructions
- 1. Whisk cornstarch into evaporated milk
- 2. Melt butter, sauté jalapeño 2 min
- 3. Add Ro-Tel, cook 1 min
- 4. Pour in milk mixture, simmer
- 5. Low heat, add cheese in handfuls, stir until smooth
- 6. Add jalapeño brine to taste
